Power your morning with this nutrient packed superfood breakfast.
1 cup almond milk
15 or so dried goji berries
3 teaspoons chia seeds
a little cinnamon - maybe 1/4 teaspoon
mix above ingredients in a bowl and allow to sit for about 30 minutes, stirring every 5-10 minutes
I like to add herbs where I can, having tried this recipe with a little basil and also with mint, both were quite nice. Obviously adding fruits and maybe some agave nectar will sweeten this up and add some colorful deliciousness. The chia seeds expand as they absorb the liquid making this a delicious textural experience, similar to tapioca pudding.
The skinny on the superfoods:
goji berries: A Himalayan superfood, packed with essential amino acids, vitamins A, C, and E, and over 20 trace minerlas and vitamins including zinc, iron, phosphorous, riboflavin (B2), and carotenoids.
chia seeds: An Aztec superfood supplying an excellent source of omega fatty acids, an easily digestible form of protein and loaded with minerals, vitamins and soluble fiber.

does it result in a pudding-like texture or is it more soupy?
ReplyDeletemine was a little soupy, but if you add more chia seeds I think you'll get more of a pudding texture
